Ingredients

  • 115g unsalted butter
  • 150g plain flour
  • 2 tsp matcha powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100g white sugar
  • 50g brown sugar
  • 1 large egg plus 1 egg yolk
  • 1 tsp vanilla extract
  • Optional: white chocolate chips, sea salt for topping

How to Make It

  1. Brown the butter: melt over medium heat, stirring occasionally, until golden brown and nutty smelling. Pour into a bowl and let cool for 15 minutes.
  2. Whisk browned butter with both sugars until combined. Add egg, egg yolk, and vanilla and whisk vigorously.
  3. Sift in flour, matcha powder, baking soda, and salt. Fold until just combined.
  4. Fold in white chocolate chips if using. Chill dough for 30 minutes.
  5. Preheat oven to 175C. Line a baking tray with parchment.
  6. Scoop tablespoon-sized balls of dough onto the tray, spaced well apart.
  7. Bake 10 to 12 minutes until edges are set but centres look slightly underdone.
  8. Cool on the tray for 10 minutes. Sprinkle with sea salt.
