  • 3 eggs plus 2 egg yolks
  • 400ml whole milk
  • 200ml heavy cream
  • 80g caster sugar
  • 2 tsp culinary grade matcha powder

  • Caramel: 100g sugar plus 3 tbsp water

How to Make Matcha Flan?

  1. Caramel: Heat sugar and water in a saucepan over medium heat without stirring. When it turns deep amber (about 8-10 minutes), immediately pour into ramekins and tilt to coat the base. Work fast – caramel sets quickly.
  2. Preheat oven to 160C. Bring a kettle of water to boil for the water bath.
  3. Warm milk and cream in a saucepan until just steaming – do not boil.
  4. Whisk eggs, yolks, and sugar until just combined (not foamy).
  5. Sift matcha into the warm milk mixture and whisk smooth.
  6. Slowly pour the warm milk mixture into the egg mixture, stirring gently. Add vanilla.
  7. Strain through a fine mesh sieve twice for the smoothest texture.
  8. Pour into caramel-coated ramekins. Place in a deep baking dish. Pour hot water halfway up the sides of the ramekins.
  9. Bake at 160C for 35-40 minutes until the edges are set but the center still has a slight wobble.
  10. Cool to room temperature, then refrigerate at least 4 hours or overnight.
  11. To serve: run a knife around the edge and invert onto a plate.

Tips for Perfect Matcha Flan

  • Strain the custard at least twice to remove any foam or lumps.
  • The water bath is essential – it prevents the flan from cracking or becoming rubbery.

  • Chill completely before unmolding. Overnight is best.
