Ingredients (9×5 inch loaf or 8-inch round)

  • 225g unsalted butter, softened
  • 200g caster sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 250g all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 80ml whole milk
  • 2.5 tsp culinary grade matcha powder
  • 2 tbsp extra milk (for matcha batter)

How to Make Matcha Marble Cake

  1. Preheat oven to 175C. Grease and flour your pan. Line with parchment.
  2. Cream butter and sugar until pale and fluffy, about 5 minutes.
  3. Add eggs one at a time, beating well after each. Add vanilla.
  4. Sift together flour, baking powder, and salt. Fold into the butter mixture alternating with milk in 3 additions.
  5. Divide batter into two equal portions.
  6. Sift matcha into one portion along with the extra 2 tbsp milk. Fold gently until evenly green.
  7. Drop alternating spoonfuls of vanilla and matcha batter into the pan, layering them.
  8. Use a skewer or knife to make 3-4 figure-of-eight swirls through the batter. Do not over-swirl or you lose the marble effect.
  9. Bake at 175C for 45-55 minutes (loaf) or 35-40 minutes (round). Test with a skewer – it should come out clean.
  10. Cool in the pan for 10 minutes, then turn out onto a wire rack.
